Ingredients

 

3/4 cups long-grain rice

11 ounces mandarin oranges (canned, drained, juice reserved)

2/3 cups yoghurt (full-fat)

4 tablespoons mayonnaise

2 tablespoons lemon juice

1 pinch curry powder

1 pound white asparagus (canned white asparagus is also OK)

1 tablespoon sugar

1 pound asparagus (green, woody ends removed and cut into thirds)

2 tablespoons sunflower oil

1 pound ham steak (thick-cut, cut into 1/2-inch pieces)

1 onions (chopped)

1/2 bunches watercress (or arugula)

1.Cook the rice according to the package instructions. To make the dressing, mix 6tbsp of the reserved mandarin juice with the yogurt, mayonnaise, lemon juice and a little curry powder to taste.

 

2.In boiling water seasoned with the sugar, boil the white asparagus for 10-15 mins, depending on the thickness. Add the green asparagus 5 mins before the end of the cooking time.

 

3.Heat the oil in a frying pan and cook the meat for about 5 mins, turning. Add the onions after about 3 mins. Carefully stir in the mandarin segments and toss gently in a bowl with all the other prepared ingredients. Divide watercress or arugula between four plates.
