AKA euphoria longan or nephelium longana. Named "dragon's eye" in Mandarin, longan fruit has a jellylike flesh with a mild flavor resembling mangoes or grapes. Longans are native to southern Asia, where they are eaten raw, canned, dried, cooked into desserts or sauces, or added to cocktails. Fresh longans’ season is between July and September. STABILITY/ INCUBATION TEST
Stability: Three samples must be analyzed:
Sample 1: 37℃for 10 days
Sample 2: 55℃for 7 days
Sample 3: control
The difference in PH is less than 0.3.

The test should comply with commercial sterilization requirement of preserved food.
